At Cactus Blue we aim to be more than just another restaurant; we wanted to create a space that feels fun, fresh, and festive.
We take pride in offering our guests amazing flavors – many of which are native to Puebla, and others that were created to meet the tastes of a generation looking for a creative take on the traditional.
Established in 2004, Cactus Blue was born from a passion to want to cook in ways that inspire the creator and consumer. We wanted friends, families, and fellow foodies to come together around a mutual love of food and community.
In 2023, we moved to Emmaus, PA and shifted our concept to give ourselves a little more time with our family.
Our 3 girls are growing quickly and in having the restaurant for 19 years and that saw 2 recessions and a pandemic, we wanted to make sure that we could be around for 19+ more.
We are also thrilled to have added Executive Chef Peter Sokolski to lead our passionate and dedicated kitchen crew. Chef Pete values creativity and taking risks which leads to delicious outcomes for Cactus Blue. And, at his right hand, is our trusted chef and lifelong family friend, Milo Linares-Sanchez.
Our new space is designed to provide a cozy and modern atmosphere, perfect for lunch with good friends and colleagues, dinners with families, celebrations, and everything in between.
Our friendly and attentive front of the house staff, led by Isabel Marquez-Sanchez ,are here to ensure your experience is nothing short of exceptional.
At our core, we believe in giving back to the community that has supported us throughout the last two decades.
Cactus Blue actively participates in community events, gives generously to local non-profits and believes that we are all stronger together.
